Although I can’t include the home-made Chicken Enchiladas on the weight loss menu, its vegetarian version, which includes beans and corn as a filling, would satisfy the craving for Mexican food so notorious for the huge amounts of calories and fat. I’d also use less cheese and replace the sour cream as a topping with salsa or taco sauce. Another helpful and healthful solution would be adding Guacamole as a topping. For dieters, I’d skip the rice portion as well. This is one of the most favorite dishes on my family menu, since kids love it, and, believe me, even if eaten for dinner, it won’t cause digestive discomfort, as it’s home made, with quality ingredients and no food additives.
