Healing Wild Mushroom Soup

This Asian dish is most excellent for the cold seasons and makes a pleasing dinner meal. Wild mushrooms like Shiitake are well known not only for their exquisite flavor but also for their anti-tumor, cholesterol-lowering, and virus-inhibiting effects. So here is a healthy meal that is also delicious. The ingredients could vary, and Ramen noodles can be added if prepared for lunch. Although Shiitake mushrooms tend to be somewhat pricy, the Asian grocers sell them for less than the organic stores. I prefer using fresh vs dry as the texture is better and the flavor seems more refreshing. Napa cabbage could also be added, if preferred, or even bok choy. The ingredients, again, are simple and to taste: 1/2 chicken broth and 1/2 water, fresh ginger, a few drops of sesame oil, 1/2 tsp fish sauce (optional), sliced scallions (optional), cilantro (optional).

And here is something to remember: Qi fen bao (七分飽), is an age-old, often-repeated Chinese dietary adage: Eat only until you are ‘7 parts full’ (70 percent full)
