Crepes with Non-Hybridized Flour


I just made this wonderful discovery while shopping at Whole Foods. Great news for people with sensitivities to regular wheat flour. There is a kind of flour called Jovial, 100% Organic Einkorn all-purpose four. It’s unbleached and unbromated, the only wheat never hybridized (as it states on the package.) Sounds good? It’s pricy, a little over $6 for 2lbs, but worth trying. I made these very thin crepes this weekend, and I could tell the difference as I didn’t have the slightest discomfort afterwords. So give it a try and let me know about your experience. I’m certainly not big on baking and sweets, but really liked the flavor of this flour.
