Thai Curry has always been at the top of the list of my favorite dishes with the lasting fragrance of fresh curry leaves, woodsy galanga, and multitude of spices, so perfectly blended and moderated in coconut cream, giving the highs of culinary excitement to the taste buds and taking the imagination to far-away land of still lotus flowers and compassionate Buddhas. Whether  prepared with green curry (using mostly green vegetables) in spring, or Red or Panang, in summer, with the right amount of spice (pepper), it has very good nutritional value due to coconut being a superfood, salmon rich in Omega-3, and all the green vegetables and spices in it. In spite of the notion that Pad Thai is one of the most popular Thai dishes, the Thai Curry with Salmon is a winner when it comes to the fullness of flavor and nutritional support. Impress your guests with this delicious meal, or enjoy it yourself, prepared either with shrimp and salmon,  chicken, or simply vegetarian.
